Spanakopita is one of the traditional Greek pies together with tyropita (cheese pie) are the most popular in Greece.Spanakopita is relatively easy to make food in Greece, here is the recipe.
1 kilo spinach
1/2 kilo spring onions
2 large onions
1 bunch fresh dill
1 teacup olive oil
1 glass water
1 glass white wine
1 kilo flour
Pastry: Mix the flour with the cups of oil and wine. Knead well. roll out thinly as in the video for this recipe.
Filling: Finely chop spring onions and onions. Fry in little olive oil until translucent. Wash and finely chop the dill and the spinach and add to the onions. Fry gently until spinach has wilted. Remove from the heat and mix in the crumbled feta cheese.
Fill the pastry with the cheese and spinach mixture as in the video. Bake in a pre-heated oven 200 c for 45 -60 minutes. Makes about 30 cheese pies.
Variation: A tasty variation of this dish is Prasopita. This is adding 1 kilo of chopped leeks and less onion to the above ingredients.
