Briam is a very easy Greek vegetable dish to make and is a verry common Greek food,here is the recipe.
Briam Ingredients:
1 kg courgettes. Washed and sliced.
1 kg potatoes. Washed and sliced.
1 kg aubergines.(egg plants) Washed and sliced.
3 onions sliced
2 green peppers Washed and thinly sliced.
1 kg peeled and deseeded fresh tomatoes or 1 tin tomatoes or tomato paste
salt & pepper
1 bunch parsley finely chopped
1 cup olive oil
Method:
Put all ingredients in a large roasting pan and stir well to ensure the vegetables are well coated in the olive oil. Roast in moderate over for approx 90 minutes. To prevent the vegetables burning and sticking to the bottom of the pan, add a little water during the cooking if necessary. If liked, 20 minutes before the end of the cooking time, you could add crumbled feta cheese to the dish. Serve when the cheese is melted and golden.

Arakas is another tasty food of Greece
Ingredients:
and is used as a main dish mostly in the Summer because it is lite.
1 1/2 kg fresh or frozen green peas
4-5 finely chopped spring onions,
2-3 oz butter
1 tin of chopped tomatoes or 3-4 fresh ones, chopped with the seeds removed.
1 bunch finely chopped fresh dill
salt & Pepper
pinch of sugar
Method:
Shell and wash the peas. Put in a saucepan and add enough water to just cover the peas. Add the pinch of sugar. Bring pan to the boil and simmer the peas for about 15 minutes. Gently fry the chopped spring onions in the butter until golden then add the chopped fresh dill, and tomatoes. Season to taste with salt and pepper. Bring slowly to the boil and then add the peas. Cover and cook all together over a gentle heat for around 30 minutes.
If liked you could add 3 sliced carrots or 4 quartered potatoes to the dish before cooking for 30 minutes.

Fassolakia ladera is another Greek dish very easy to make. Fassolakia ladera can be eaten as is or with the company of Greek Feta and Retsina wine. Is one of the healthiest Greek foods.
Ingredients:
1 kg fresh green beans
1 large onion grated
4 potatoes, quartered
4 fresh tomatoes or one tin chopped tomatoes
2 heaped tblspns tomatoes paste
a little grated garlic
finely chopped parsley
salt & pepper
pinch of sugar
Method:
Clean and wash the beans well. Heat the oil in a pan and gently fry the onion until golden brown. Add the rest of the ingredients except the quartered potatoes, with enough water to prevent the vegetables burning and provide a little sauce. Simmer gently for 20 minutes then add the potatoes. Keep your eye on the pan and add more water if needed. The dish is ready when all the vegetables are cooked.
